I slipped into a breakfast rut recently. I got so bored of my usual porridge that I found myself not even wanting breakfast. I was flicking through old recipes and reminded myself of how much I used to love taking the time to wake up early and create something unique and delicious to start the day! I’ve decided that, as extra as it sounds I can’t let my monotonous mornings go on. This week I revolutionised my recipe repertoire and will be sharing some new eats for the morning with you!
This cacao coconut granola takes 10 minutes to make on the stove top and it’s free of all the crap that’s in most supermarket brands. Perfect for sprinkling on top of smoothies, porridge, yogurt or with whatever milk you enjoy. It gives you the same chocolatey fix as Coco Pops without all the sugar.
Cacao Coconut Granola Recipe
Time: 10 mins
Makes: 6 (ish) servings
3 cups or 270g oats
1/2 cup or 40g flaked coconut
1/2 cup or 60g chopped mixed nuts
1/2 cup or 60g hemp seeds
3 heaped tbsp cacao powder
3 heaped tbsp maple/agave syrup
1/2 tsp cinnamon
Pinch of salt
Put the oats in your largest + deepest frying pan/saucepan. Turn on the stove heat to medium and let them cook for about 5 minutes, stirring regularly to avoid burning. Add the coconut and nuts and cook for around 3-4 more minutes. Add the cacao, cinnamon and maple syrup and stir in until combined. Add some more maple or cacao if you would like it sweeter or more chocolatey. I found these quantities to be perfect. Turn off the heat and stir in the hemp seeds. I decided not to cook these in because heating is unnecessary and damages the nutritional properties of this superfood. If you don’t have access to hemp seeds, chia seeds would be a good substitute. Ladle the granola into an airtight container and store in your cupboard for a couple of weeks.
